A Not So Perfect Brazo De Mercedez Cupcake

I was contemplating on what recipe to join the @Tots100 competition. I have few normal recipe but I want something new and really nice for the said comp. So tried remembering the cakes that I really love and remembered this one that I so adore, BRAZO DE MERCEDEZ!!! Found a nice blog called Bake Happy with a recipe for it and tried it. As I want a smaller yield I divided her recipe in half.

Ingredients

Filling:

  1. 4 egg yolks
  2. 1/2 tsp vanilla extract
  3. 1/4 cup plain flour (the recipe calls for cornstarch)
  4. 150 ml condensed milk
  5. 150 ml water
Meringue:
  1. 4 egg whites
  2. 1/2 cup sugar
  3. 1/2 tsp cream of tartar
  4. 1/2 tsp vanilla extract

Procedure

Filling:

  1. Mix Everything in a pan.
  2. Put on fire, whisk till its gooey and set aside.
Meringue:
  1. Whisk the egg whites in your processor.
  2. Add vanilla extract and cream of tartar.
  3. Slowly add sugar while whisking
  4. Pipe in your liners (I added 2 layers of liners as Bake Happy had a problem with her meringue burning) and bake in the oven.
  5. Cool down and pipe in the filling.
  6. Dust with icing sugar and serve.

But dont try this recipe just yet!!!!

I have problems while baking, as the recipe needs cornstarch and I cant find any here (if you know where to get it please tell me as a lof of recipe that I know uses it!) I used plain flour. When I prepared the filling which is suppose to be a gooey turned really really thick. I will try using less and see from there. If its still not the consistency I might try to add a bit of liquid.

Also notice how my presentation is a bit not presentable. I am a new baker and most of the sweets I prepare doesnt need piping icing so I dont have any of those. I bought cheap ones (I dont have budget to get a decent entry level gadget) and as a newbie this did not help. But I will practice and practice and see what will happen. I probably need to do this more time to make and get it right before I can join the said comp.
